Several years ago, while dining in Spain, our founder was introduced to tender, rosy-pink slices of membrillo on a plate of “tapas,” matched with the country’s traditional Manchego cheese, and came home to New England an inspired woman. Her inspiration led to the founding of a company, a push for a regional #QuinceRevival, largely based around Vermont Quince Company’s flagship product, Quince Paste -- or, as it is called in Spain, Dulce de Membrillo.
Every dense but yielding block of Vermont Quince Paste is of the highest quality, with its delightful warm color, superior smoothness of texture, and its unparalleled flavor: thick, tangy, rich, and bright, perfect as a counterpoint for almost any cheese.
While the raw fruit is lemon-yellow and highly aromatic, in cooking its color transforms to a ruddy, blushing pink, its flesh softens to butter, and its flavor both mellows and intensifies. Augmented by Vermont maple syrup, organic lemon juice, and organic cane syrup, rose-colored slices or cubes of Vermont Quince’s signature Quince Paste makes a memorable indulgence for the eye as well as the palette.
Membrillo makes a delightful addition to cheese plates and salads; it can also be used as a pastry filling, and as an accompaniment to roasted or grilled meats. Should you need to dazzle an unexpected guest (what to do for an afternoon teatime treat? a quick and delightful dessert?) simply roll cubes of Vermont Quince Dulce de Membrillo in “sanding” sugar (sugar with large, clear crystals) for a magical and sparkling confection in an instant.
